Aunt Kay’s Easy Sesame Chicken

1lb chicken breasts- cut into bite size
1/4c flour
salt+pepper

1/3 cup peanut oil (I use half peanut, half olive oil)
sesame oil to taste (a few drops to 1/2tsp)

3T sugar
1/4c soy sauce (I use the lite kind, less salt)
sesame oil again to taste

2T sesame seeds
1/4c scallions, chopped (about 2)

 

Heat oil in skillet over high heat. Add salt+pepper to flour in shallow dish/plate. 
Dredge chicken pieces in flour, and then place in hot pan in batches. 
Cook ~3min, turning once, until lightly browned and cooked through. 
Transfer to plate lined w/paper towel.
In a small saucepan heat soy sauce, sugar and sesame oil until the sugar is dissolved and the sauce is hot.
Toss cooked chicken w/sauce, green onions, and sesame seeds. Serve.
We love it with cooked brown rice and quick sauteed sugar snap peas.
