We made these this month at Cooking Club….and by “we” I mean my friends Alicia and Lynda. I had nothing to do with them, other than eating them- as I was the soup chef that day. (recipe also here) BUT I can attest to just how amazingly delicious they are!

Bars:
4 eggs
2 cups sugar
1 cup vegetable oil
1 can (15oz) pumpkin (NOT pumpkin pie mix- just pumpkin)
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground cloves
1 cup raisins, if desired and we did not desire
Cream Cheese Frosting
1 3oz pkg cream cheese, softened
1/3 cup butter
1 tsp vanilla
2 cups powdered sugar
1/2 cup chopped walnuts, if desired which we again did not
Heat oven to 350*. Grease bottom and sides of 15x10x1-inch pan (We used a 13x9x2).
In a large bowl beat eggs, sugar, oil, and pumpkin until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. (raisins too if you desire) Spread in pan.
Bake 25-30min or until light brown. Cool completely in pan on cooling rach, about 2hrs (we did not wait this long
)
In medium bowl, beat cream cheese, butter, and vanilla with mixer on low until smooth. Gradually add in powdered sugar, 1 cup at a time on low until snooth and speadable. Spread frosting over bars. Sprinkle with walnuts if desired.
Store in refrigerator. (really? I don’t do that…)
