Greek Salad (Low-fat)
4 cups romaine leaves, torn and washed
1 cucumber seeded and sliced thin
1 tomato cut into wedges
1/2 red onion sliced thin
6 Black Olives- sliced
Dressing:
3/4cup Feta Cheese
1 tsp olive oil
2TB fresh lemon juice
1/2 tsp dried oregano
1/4 tsp fresh black pepper
1-2cloves garlic, crushed
3 TB water
Mix dressing ingredients in a small processor or blender.
Toss together salad ingredients and add dressing and serve.
I could live on this in the summer
