Lemon Artichoke Chicken

1 lemon
4 boneless chicken breast halves
salt+pepper
1 T olive oil
1/4C minced shallots
1 can (14oz) artichokes, drained and chopped
1 T chopped fresh thyme

 

Cut 4 thin slices from 1/2 of the lemon. Remove the seeds. 
Squeeze 1T lemon juice from remaining lemon half. Sprinkle chicken with s+p.
Heat oil in large skillet over medium heat until hot. 
Add chicken; cook 8-10min total or until chicken is done, turning once. 
Remove to a plate.  Add shallots and lemon slices to skillet. 
Cook 1 minute or until just softened and lemon is tinged with gold. 
Stir in artichokes, lemon juice and thyme. 
Cook and stir gently for ~30 seconds (until heated through) Pour over chicken.
Great with a green salad and loaf of crusty french bread.
