Mediterranean Pitas

Nonstick Cooking Spray
1.25 lbs chicken breasts, cut into strips
1 large tomato
1/2 cucumber, seeded and sliced
1/2 cup red onion sliced thin
2TB Cider Vinegar
1 TB Olive Oil
3 tsp fresh minced oregano or 1/2 tsp dried
2 tsp minced fresh mint or 1/2 tsp dried
1/4 tsp salt
12 lettuce leaves (optional)
6 whole wheat pita breads, cut in half and toasted

 

Spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add chicken; cook and stir 7-10minutes or until browned and no longer pink in the middle. Cool slightly.
Combine chicken, tomato, cucumber, and onion in medium bowl. Drizzle with vinegar and oil; toss to coat. Sprinkle with oregano, mint and salt; toss to combine.
If desired- line pita with 1 lettuce leaf, divide chicken mixture evenly- spoon into pita halves.
