Rhubarb Crumble

1 cup flour
1 tsp baking powder
1/4 tsp salt
1/4 cup chilled butter
1 egg (beaten)
1 T milk

5 cups chopped rhubarb
1 box strawberry jello (3oz)

1/4 c butter- melted
1 cup sugar
1/4c flour

Mix together flour, BP, and salt. Cut in butter and egg. Press into greased 9×9 pan.
Top with chopped rhubarb. Sprinkle the dry jello powder on top of rhubarb.
Mix together last 3 ingredients and crumble over the top.
Bake at 350 degrees for 45min or until bubbley and a tinged brown on top (put under broiler for a few minutes if needed to brown)

Serve as is, or with fresh whipped cream of vanilla ice cream.

This was my mom’s recipe and she made it every. single. summer. I love it- partly because it’s delicious, but also for the happy memories:)
