Tilapia With Wine & Tomatoes

This is possibly one of my favorite recipes….and my kids INHALE it. Plus- it’s a great excuse to open a bottle of wine:)

Serves 4 (easy to adapt to more people)

4 fillets Tilapia
salt + pepper
4 TB butter
3 cloves garlic- minced
4 fresh basil leaves- chopped
1 large tomato- chopped
1 cup white wine
4 cups cooked brown rice

Preheat grill to med-high heat.
Place tilapia fillets side by side on a large piece of aluminum foil. Season each one with s+p. Place one tablespoon of butter on top of each piece of fish, and top with some garlic, basil and tomato. Pour the wine over everything. Fold foil up around fish and seal into a packet. Place packets on a cookie sheet (to help carry it to grill)

Place foil packet on grill and cook for 15minutes (or until fish flakes easily) Open packet carefully and serve with the drippings/sauce over cooked brown rice. Add a side of green veggies of your choice.

If you are anti-aluminum foil or don’t like to use the grill- you can also cook this in a covered dish in your oven at about 450* for about 20minutes or so. Check for doneness as it takes a little longer in the oven.
